As the sun dips behind Jakarta’s restless skyline, the city takes on a different rhythm - sleeker, softer, more cinematic. For three weeks only, from 16 February to 7 March 2026, that golden-hour glow frames an extraordinary culinary migration: Syrco BASÈ arrives in the capital for an exclusive pop-up at Altitude Grill Jakarta, perched on the 46th floor of The Plaza Jakarta.


The setting is deliberate. High above the traffic and tempo of central Jakarta, floor-to-ceiling windows reveal a city in motion—while on the plate, Bali unfolds in thoughtful, measured courses.


A Philosophy, Reinterpreted

At the helm is Syrco Bakker, the Indonesian-born chef who previously earned two Michelin stars in Europe before returning to his roots. His Ubud-based culinary hub has quickly become one of Bali’s most compelling dining destinations, grounded in three guiding principles: Traceability, Nature, and Transparency.


Rather than replicate the Ubud experience wholesale, the Jakarta pop-up reinterprets it. The menu reflects the same conscious dining ethos—ingredients sourced through close relationships with farmers, fishermen, and artisans—yet it is recalibrated for an urban audience. Each dish carries a narrative of origin, seasonality, and collaboration, presented with the refinement of modern Western technique.


Signatures Above the Skyline

The tasting menus chart the evolution of Syrco BASÈ, balancing established signatures with new explorations inspired by the broader Indonesian archipelago.


A Steak Tartare seasoned with rendang spices delivers depth without overpowering the integrity of the beef—an interplay of raw elegance and slow-cooked tradition. Taro Rösti with Duck Betutu layers crisp texture over aromatic Balinese spices, while creations featuring spiny lobster highlight pristine seafood treated with restraint and precision. For dessert, Pure Chocolate with soursop and avocado offers a study in contrasts: bittersweet, tropical, and silk-smooth.

New compositions debut alongside these signatures, shaped by ongoing research trips and collaborations across Indonesia. The result feels progressive yet anchored—never novelty for novelty’s sake.



A Toast to Indonesian Craft

The beverage program underscores the same commitment to locality. Curated pairings spotlight Indonesian and Bali-based producers, with artisanal spirits from names such as Three Peaks, Black Rock, Nusa Caña, Yellow Sky, and SABA Grappa woven into a thoughtful cocktail selection. The aim is not simply to complement the food, but to elevate regional craftsmanship in every glass poured.


Guests may choose between the Journey Menu (available for lunch and dinner), the lighter Pure Menu (lunch only), or a Full Experience that includes Champagne, curated cocktail and wine pairings, mineral water, a closing cocktail, and coffee or tea. It is a format that encourages lingering—best enjoyed as the sky transitions from amber to indigo.


Bali, Reimagined in the Capital

Throughout the residency, Altitude Grill undergoes a subtle transformation. Natural textures, carefully considered details, and a curated sensory landscape—music, aroma, lighting—evoke the spirit of Bali without resorting to pastiche. It is immersive yet restrained, allowing the cuisine to remain the focal point.


The collaboration with Plaza Indonesia reflects a shared commitment to offering meaningful, elevated experiences within one of the city’s most prestigious addresses. Here, business, lifestyle, and gastronomy converge—fitting for a concept that bridges island serenity and metropolitan dynamism.


In a city that rarely pauses, this limited engagement invites diners to do just that: to look outward at Jakarta’s soaring skyline, and inward at the stories behind what lies on their plates. Bali may be a flight away—but for three weeks, its spirit rises 46 floors above the capital.
