Founded by the two Michelin-starred Chef Syrco Bakker, Syrco BASÈ embodies a deep respect for traceability, nature, and transparency. The restaurant’s culinary philosophy revolves around its guiding principles, Traceability, Nature, Transparency, ensuring that every ingredient is ethically sourced and fully traceable. Collaborations with local farmers, fishers, and artisans form the backbone of Syrco BASÈ’s menu, transforming authentic Balinese produce into innovative expressions of global gastronomy.


At the core of this philosophy is Syrco BASÈ’s farm-to-table approach. Ingredients are grown directly in its regenerative garden, where herbs, flowers, and edible plants thrive under mindful care. Guests can choose between two distinctive journeys: the BASÈ Journey, an 8-course tasting menu that reflects the rhythm of Bali’s seasons and the intimate KU culinary atelier, a 12-seat chef’s counter that offers a direct encounter with Chef Syrco and his team. Dishes such as Bebek Betutu, Nasi Ulam, and Sambal Dabu-Dabu reinterpret Indonesia’s culinary heritage through modern precision, while creations like Sepia with black garlic and lemon kosho or Hamachi with watermelon and coconut express a seamless dialogue between East and West.

Every visit begins with a walk through the garden and the Aging Room, where guests learn about local producers and the stories behind each ingredient, a tangible reflection of Syrco BASÈ’s transparency and community focus.
